Method

  1. Soak the dried kokum rinds in warm water for 30 minutes.

  2. Squeeze the kokum thoroughly in the water to extract all the deep red juice. Strain this kokum extract into a bowl and discard the rinds.

  3. In a mortar and pestle, crush the garlic clove and green chilli into a fine paste.

  4. In a pitcher, combine the chilled buttermilk, the strained kokum extract, the garlic-chilli paste, and salt.

  5. Stir well until the liquid turns a pale pink color.

  6. Garnish with finely chopped fresh coriander.

  7. Serve chilled.
