Method

  1. Carefully scoop out the soft, gelatinous white flesh (malai) from the tender coconut, ensuring no brown fibrous shell bits are attached.

  2. Place the fresh coconut malai into a blender jar.

  3. Add the chilled tender coconut water, full fat milk, and condensed milk to the blender.

  4. Drop in the ice cubes and cover the blender tightly.

  5. Blend on medium-high speed for roughly 45 to 60 seconds until the coconut flesh blends into a rich, smooth shake.

  6. Pour the refreshing shake into tall glasses and serve immediately before the natural fats begin to separate.

The shake should be smooth, milky, and dense, with a fresh coconut aroma and no fibrous bits.

Getting it right

Tip

Use very soft, jelly-like coconut flesh. Tough mature coconut will make the shake gritty instead of creamy.

Common mistakes

The shake separates within minutes of pouring.
That is the coconut fat, and it is why the recipe says serve immediately. Blending longer will not stop it — pour and drink, or blend it again briefly rather than stirring.

  • Any plant milk works for a dairy-free shake; the coconut carries it well enough that the swap barely shows.

Storing and reheating

Drink at once. It separates in the glass and cannot be re-emulsified properly once chilled. Scooped coconut malai keeps two days in its own water, so prepare that ahead and blend to order.
