Quantities are for 2 servings.

Includes 2 hours of fennel soaking; active blending, straining, and mixing takes about 15 minutes.

Method

  1. Soak the fennel seeds in a little water for about 2 hours.

  2. Transfer the soaked fennel seeds along with the soaking water into a small blender jar. Blend until it forms a very fine, smooth paste.

  3. In a pitcher, combine the chilled milk, powdered sugar, and cardamom powder.

  4. Place a fine mesh strainer over the pitcher and pour the blended fennel paste into it. Press the paste with a spoon to extract all the flavorful liquid into the milk.

  5. Discard the dry, fibrous residue left in the strainer.

  6. Stir the milk thoroughly until the sugar dissolves. Serve immediately.

Getting it right

Tip

For a richer version, you can soak and blend a few almonds along with the fennel seeds. Serve this drink well chilled for the best fennel-milk flavor.
