Method
Divide the fresh lemon wedges and mint leaves equally into the two tall serving glasses.
Using a muddler or the back of a wooden spoon, gently press and muddle the lemon and mint together right in the glass. Do not over-crush the lemon rind, as it can turn bitter; you just want to release the juices and mint oils.
Pour the simple sugar syrup and sprinkle the black salt over the muddled base in each glass.
Fill the glasses to the top with ice cubes. Crushed ice gives a more cafe-style feel.
Top off both glasses with chilled plain soda water; pour slowly because it will foam.
Insert a long spoon and pull the muddled mint and lemon upwards from the bottom to mix the flavors evenly. Garnish with a fresh mint sprig and serve immediately.
How to tell it's done
The mojito should be fizzy and ice-cold, with bruised mint, lemon wedges, and a clean citrus finish.

Tip
Smack the fresh mint sprig garnish firmly against your palm before placing it on the drink. This releases a bright mint aroma right above the glass.
