Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Active time only; keep the water lukewarm rather than boiling before adding honey.

Method

  1. Heat the water until comfortably warm (lukewarm). Do not let it boil, as very hot water can dull the delicate flavor of honey.

  2. Pour the lukewarm water equally into serving mugs.

  3. Add the freshly squeezed lemon juice evenly between the mugs.

  4. Stir in the honey until it is completely dissolved.

  5. Drink immediately while it is still warm.

How to tell it's done

A very clear, light, warm liquid that is gently sweet and mildly tangy.

Getting it right

Tip

For regular use, drinking through a straw can reduce direct contact between the lemony drink and your teeth.

What to serve it with

Serve as a warm early-morning drink for a light and fresh start to the day.

Common mistakes

The honey sinks and sits at the bottom of the mug.
Stir it into the water before adding the lemon, and keep stirring until it has fully dissolved. Honey dropped into water that has already been acidified takes far longer to disperse.
The drink tastes harsh and bitter.
Squeeze the lemon rather than crushing it, and keep the pith and seeds out. Bitterness in this drink comes from the pith, not the juice.

Substitutions

  • Lime works in place of lemon and is a little sharper.
  • Jaggery or maple syrup can replace the honey, though both change the flavour noticeably.

Storing and reheating

Make it fresh each time. It is a two-minute drink and lemon juice turns dull and metallic within a few hours, whether it is kept warm or chilled.
