Method
In a mixing bowl or traditional earthen pot, combine the crumbled khoya and sugar. Mash them together using a whisk or a wooden churner (madhani) until they form a smooth paste.
Add the thick, chilled curd and cardamom powder to the khoya-sugar mixture.
Using the wooden churner, blend the mixture continuously until it becomes frothy and creamy. Avoid using an electric blender to maintain the dense texture.
If the lassi appears too thick, pour in the chilled milk gradually and churn again to reach the desired consistency.
Pour the thick lassi generously into serving glasses. Traditionally, it is served in tall brass glasses.
Top with a small extra dollop of crumbled khoya or fresh cream, and garnish with slivered almonds before serving immediately.
How to tell it's done
The lassi should be very thick, velvety, and frothy, with tiny khoya granules throughout.

For the best flavor, gently roast the khoya on a pan until it turns slightly pink before adding it to the lassi. This mimics the caramelized flavor of authentic Amritsari pedas.
