Ingredients
Quantities are for 2 servings.
Includes 2 hours of kokum soaking; active mashing, straining, and seasoning takes about 15 minutes.
Method
Soak the dried kokum rinds in warm water for 2 hours.
2 hr
After soaking, squeeze and mash the kokum rinds into the water using your hands. The water should turn a deep ruby red.
Strain this concentrated kokum extract (Agal) into a pitcher. Discard the leftover rinds.
Add the roasted cumin powder, black salt, and the slit green chilli to the pitcher.
Pour in the chilled water and stir well. Let it rest for 5 minutes so the chilli infuses lightly.
5 min
Remove the green chilli before serving. Serve chilled over ice.
How to tell it's done
A strikingly clear, vibrant ruby-red liquid that hits the palate with an intense, refreshing tartness and a savory cumin finish.

Tip
Unlike Kokum Sharbat, Kokum Agal is traditionally strictly savory and tangy, with zero added sugar, making it a sharp, savory contrast after rich meals.
What to serve it with
Serve chilled in small glasses after a rich Maharashtrian or Konkani seafood meal.
