Method

  1. In a chilled mixing bowl, pour in the cold heavy whipping cream. Use a hand blender or whisk to beat it until soft peaks start to form.

  2. Add the powdered sugar and vanilla extract to the cream. Continue to whip until it holds stiff peaks. Set this sweetened whipped cream aside in the fridge.

  3. Take half of the fresh chopped strawberries and blend them into a chunky puree. Leave the remaining chopped strawberries as they are for layering.

  4. To assemble, take a tall transparent glass or a wide bowl. Start by placing a generous spoonful of the fresh chopped strawberries at the bottom.

  5. Add a layer of the prepared strawberry puree over the fruit pieces.

  6. Next, pipe or spoon a thick layer of the cold whipped cream. Add a scoop of vanilla ice cream in the center.

  7. Repeat the layers of fresh strawberries, puree, and cream until the glass is full. Top with a final dollop of whipped cream and a whole strawberry, then serve immediately.

How to tell it's done

The cream should hold soft peaks, with juicy strawberry pieces, streaks of puree, and ice cream that just starts to melt into the layers.

Getting it right

Tip

Toss the strawberries with a little sugar and rest them for 10 minutes if they taste flat. They will release a glossy syrup that streaks through the cream.
