Method

  1. Thoroughly wash and chop the ripe guavas, keeping the skin intact for maximum guava flavor.

  2. In a high-speed blender, add the chopped guava, chilled water, sugar, lemon juice, half of the red chilli powder, and half of the black salt.

  3. Blend everything until it transforms into a smooth, thick puree. Pass the puree through a fine-mesh strainer to remove the hard seeds.

  4. On a small flat plate, mix the remaining red chilli powder and black salt. Rub a lemon wedge along the shot-glass rims, then dip the rims into the spice mix.

  5. Add ice cubes directly into the blender with the strained guava juice and give it a quick blitz until chilled and slightly frothy.

  6. Pour the thick, spicy-sweet guava juice into the rimmed shot glasses and serve immediately.

How to tell it's done

The shots should be thick, pulpy, and ice-cold, with a salty chilli rim and a sweet-tart guava center.

Tip

Use ripe, fragrant guavas and taste before adding all the sugar; the chilli rim needs enough fruit sweetness to balance it.
