Method

  1. Place the fresh, deseeded watermelon cubes and mint leaves in a blender jar.

  2. Blend smoothly until it turns into a fresh, vibrant red juice. Do not add water, as watermelon has sufficient water content.

  3. Strain the juice through a sieve into a pitcher if you prefer a clear cooler, or leave it unstrained for extra body.

  4. Add black salt and lemon juice to the pitcher. Stir well.

  5. Fill serving glasses with ice cubes and pour the fresh watermelon cooler over them. Garnish with a sprig of mint.

Tip

Ensure all seeds are removed before blending, otherwise, the seeds will impart a slight bitterness to the fresh juice.

Common mistakes

The juice separates into pale foam over red liquid within minutes.
That is watermelon doing what it does, not a fault. Stir before pouring, and blend only until smooth — over-blending whips in air and makes the separation worse and faster.

Substitutions

  • Basil or tulsi can replace the mint for a more peppery cooler.

Storing and reheating

Drink within a couple of hours. Watermelon juice ferments quickly and turns flat and slightly sour by the next day, even refrigerated. Cube the melon ahead instead; it keeps two days.
