Method

  1. In a mixing bowl or a large pitcher, add the roasted gram flour (sattu) and jaggery powder.

  2. Add a small amount of chilled water and mix it well using a spoon or small whisk to form a thick, lump-free paste.

  3. Once the paste is smooth, gradually pour in the remaining chilled water while continuously stirring.

  4. Add the freshly squeezed lemon juice and stir well until the drink looks evenly mixed.

  5. Pour the drink into serving glasses filled with a few ice cubes and serve immediately.

How to tell it's done

The sharbat should be slightly thick and grainy, with sattu suspended through the glass and a sweet-tangy finish.

Getting it right

Tip

Sattu tends to settle at the bottom of the glass. Always serve it with a spoon or a stirrer so you can mix it before drinking.

What to serve it with

Serve as a chilled morning breakfast drink or a filling summer cooler.

Common mistakes

The sattu settles into a lump at the bottom of the glass.
Make the thick paste first and get it completely smooth before any more water goes in. Sattu is roasted flour and it will not disperse into a full glass however hard you stir.

Substitutions

  • Sugar or honey can replace the jaggery, though jaggery is what gives the drink its darker, mineral note.
  • Black salt in place of the lemon makes the savoury namkeen sattu instead.

Storing and reheating

Drink immediately. It separates within twenty minutes and the sattu sinks; stirring brings it back once but the texture never fully recovers.
