Method
Bring the water to a rolling boil in a saucepan.
Add the sugar and let it dissolve completely in the boiling water.
Add the black tea leaves and let it boil on medium heat for just 1-2 minutes until it gets a deep red-amber color. Do not overboil or it will turn bitter.

Turn off the heat immediately. Strain the black tea into tea cups.
Add black salt and lemon juice to each cup.
Stir gently; you will notice the tea instantly turn lighter and clearer due to the lemon. Serve hot.

Getting it right
Tip
Never boil the tea after adding lemon juice, as it will make the tea highly bitter and dull the fresh lemon flavor.

- The tea is bitter and murky.
- One to two minutes of boiling and no more, then strain immediately. Black tea left in the pot goes tannic fast, and lal cha is judged on being clear and red rather than dark and heavy.
Substitutions
- Any strong loose black tea works — Assam or a Darjeeling CTC are the usual choices. Tea bags will do at a pinch, though the colour comes out weaker. Jaggery or honey can replace the sugar. Ordinary salt is not the same as black salt here; the drink loses its street-stall character without it.
Storing and reheating
Made and drunk within minutes. It does not keep — the lemon and salt turn it flat within the hour, and reheating makes it bitter.
