Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Includes 4 hours of soaking time for almonds and pistachios before blending into the oat milk.

Method

  1. In a small blender, combine the peeled almonds, peeled pistachios, pitted dates, and a splash of the oat milk.

  2. Blend until you get a completely smooth, creamy nut paste. Ensure the dates are fully pureed.

  3. In a saucepan, pour the remaining oat milk. Heat gently on medium-low.

  4. Add the blended nut-and-date paste into the warm milk. Whisk constantly so it doesn't stick to the bottom.

  5. Crush the saffron strands lightly between your fingers and add them to the pan along with the cardamom powder.

  6. Simmer gently for 5 minutes. Do not let oat milk boil hard, as it can sometimes separate.

  7. Turn off the heat. Stir in the rose water.

  8. Can be served warm immediately, or chilled in the refrigerator and served cold.

How to tell it's done

Rich, nutty, and creamy with subtle earthy sweetness and aromatic floral hints.

Getting it right

Tip

Using dates instead of sugar not only makes this completely plant-based and refined-sugar-free, but it also adds a slight caramel thickness to the drink.

What to serve it with

Serve as a dairy-free morning drink, or chill it well for a festive dessert-style beverage.
