Method
In a small mortar and pestle, lightly crush the fresh mint leaves just enough to release their fresh aroma. Do not make a paste.
Divide the crushed mint, lemon juice, black salt, chaat masala, and roasted cumin powder equally into the serving glasses.
Add a generous amount of ice cubes to each glass, filling them almost halfway up.
Just before serving, crack open the highly chilled soda water and pour it swiftly over the masala base. It will fizz up rapidly.
Stir briskly with a long spoon once and serve immediately while the bubbles are still lively.

For a sweeter version, add a tablespoon of powdered sugar or simple syrup before pouring the soda. Use very fizzy cold soda and serve within seconds.

Common mistakes
- It goes flat before it reaches the table.
- Build the masala base in the glass first and open the soda last. Poured early, or stirred more than once, banta loses the fizz that is half the drink.
Substitutions
- Any chilled sparkling water replaces the bottled soda. Chaat masala can be skipped if you have black salt and roasted cumin, since those are its main notes anyway. Bottled lemon juice is a poor stand-in here — this drink is almost nothing but lemon, salt, and fizz.
Storing and reheating
Assembled and drunk on the spot. The masala base — lemon, salts, cumin, mint — can be mixed and kept chilled for a day; the soda goes in at the last second.
