Ingredients

You'll need: Stovetop.
Method
Heat the oil and butter together in a wide pan or tawa on medium heat. (Using a little oil prevents the butter from burning).
Add the finely chopped onion and green chilli and fry briskly until the onion is golden brown and crisp at the edges.
Add the grated ginger and sauté for 30 seconds.

Lower the heat and add the turmeric, red chilli powder, pav bhaji masala, and salt. Mix well.
Add the finely chopped tomatoes. Cook for 2-3 minutes, mashing them with the back of your spatula until they turn mushy and the oil releases from the sides.

Pour the lightly beaten eggs directly over the onion-tomato masala.
Turn the heat to medium-high. Using a spatula, continuously scramble the eggs, tossing them with the masala.
Keep scrambling for 2-3 minutes until the eggs are cooked and crumbly, but still retain a slight moisture. Do not overcook them into rubbery, dry pebbles.

Turn off the heat. Toss in the fresh coriander.
Serve smoking hot.
