Method
In a cold, heavy-bottomed saucepan (strictly off the heat), aggregate the arrowroot powder, amaranth (rajgira) flour, sour curd, water, green chilli paste, and rock salt.
Whisk it thoroughly. Work out every last lump so you have a completely smooth, thin batter.
Transition the pan to a low-medium thermal source. Engage immediately with a silicone spatula or whisk, imposing a continuous, scraping stir. Ceasing agitation even momentarily guarantees structural ruin via lump formation.
Keep cooking for about 8-10 minutes. The batter will thicken quickly into a glossy, slightly translucent paste.

Test it: spread a little on a plate, let it cool for 5 seconds, and try to peel it up into a roll. If it peels away cleanly, it is ready. If it sticks, cook it for another 1-2 minutes.

Turn off the heat. Work fast: pour large ladlefuls of the hot batter straight onto your prepared, ungreased stainless steel surfaces.
Wielding a broad, flat spatula, sheer the batter outward into a hyper-thin, expansive rectangular membrane. Speed is non-negotiable before the starches lock.
Let it cool for 5 minutes. Using a knife, cut the set sheet into strips about 1.5 inches wide.

Very carefully lift the leading edge of a strip and roll it up tightly on itself into a neat cylinder. Arrange the finished rolls on a serving platter.
Make the tempering: heat the oil in a small pan, add the cumin and let it crackle, then pour this hot oil straight over the arranged khandvi.
Crown the assembly with fresh coconut snow and minced coriander.

Getting it right
Tip
Arrowroot sets extremely fast. You have about 60 seconds from the moment you turn off the heat to spread all your batter before it sets in the pan.
