Ingredients

Quantities are for 2 servings.

You'll need: Stovetop.

Method

  1. In a pressure cooker, cook the sprouted matki with a splash of water, a little turmeric and salt for exactly 1 whistle. Take it off the heat straight away; the sprouts should still have plenty of bite.

  2. Flood a deep, expansive pot with the specified cooking oil, driving it to a medium thermal state. Ignite the mustard seeds until they audibly detonate.

  3. Add the finely chopped onions. Sauté them steadily until they caramelize to a deep, dark golden brown.

  4. Add the ginger-garlic paste. Fry it for 60 seconds to cook off the raw, sharp edge.

  5. Turn down the heat. Add the goda masala, Kashmiri chilli powder, hot chilli powder and turmeric. Scrape and stir quickly for 10 seconds so the spices bloom and release their red colour into the oil.

  6. Add the diced tomatoes straight away. Cook until they break down into a thick pulp and a bright red layer of spiced oil (tarri) separates out.

  7. Transfer the hyper-boiled matki and its residual liquor into the pot. Deluge the system with the designated volume of hot water. Harmonize with salt.

  8. Force the broth to a furious rolling boil, then instantly throttle down to a simmering state. Maintain this rolling simmer for 10-15 minutes, coaxing a thick, menacing layer of fiery red oil ('Tarri' or 'Kat') to aggregate at the surface.

  9. The Architecture of Assembly: Command a deep serving vessel. Construct the base layer with a solid ladle of the dense matki matter. Armor this base heavily with an explosive crown of crunchy mixed farsan and harsh raw onions.

  10. Ladle the hot red tarri generously over the bowl. Finish with chopped coriander and a squeeze of lemon.

  11. Serve immediately, with soft pav buns for soaking up the broth.

How to tell it's done

A complex bowl of textures: soft legumes sitting in a fiery, hot, thin broth, contrasting sharply with the loud crunch of the farsan topping.

Getting it right

Tip

Authentic Misal is all about the 'Tarri' (the spicy, watery, oily broth). Do not thicken the gravy; it should be thin and fiery. Goda masala is irreplaceable for the true Marathi flavor.

A legendary breakfast that doubles as an extreme spice challenge. Serve with extra pav, raw onions, and cooling buttermilk (Chaas).
