Method
Make the tempering (tadka): heat some of the oil in a small pan over medium heat. Add the mustard seeds and let them splutter.
Add the chana dal (split bengal gram) to the hot oil. Roast it carefully until the lentils turn deep golden, which is what gives the paniyaram its crunch.
Fold in the finely chopped curry leaves, grated ginger and minced green chillies. Sauté for 10 seconds to flavour the oil.

Add the finely diced onions to the pan. Stir continuously until they turn soft and translucent, without letting them brown. Turn off the heat.
Pour this hot, aromatic tempering straight into the thick fermented batter. Fold in the fresh coriander and mix well until evenly combined.
Set a paniyaram or appe pan (cast iron is best) over steady medium heat. Put a drop of oil into the bottom of each hollow.
Charge each cavity with the spiced batter, restricting the fill volume strictly to 75% capacity to accommodate the impending thermal expansion.
Enclose the pan with a tight-fitting lid. Impose a 2-3 minute low-medium heat steam. The trapped vapor will force the crowns to puff while the bases construct a rigid, golden sear.

Take off the lid. Using a wooden skewer or a turning tool, flip each paniyaram over so the uncooked top meets the hot pan.
Cook the inverted spheres entirely uncovered for an additional 2 minutes, ensuring both hemispheres achieve an identical, shattering crispness.

How to tell it's done
Deeply golden, shiny, and highly crispy on the outside (like a dosa), while remaining incredibly soft, spongy, and fluffy inside (like an idli).

Tip
Adding roasted Chana Dal provides a sudden, fantastic crunch inside the soft dumpling. Always cook covered first so the center steams perfectly.
What to serve it with
A superb tea-time snack. Best enjoyed dipping into spicy Tomato-Onion Chutney or Coconut Chutney.
