Method

  1. Establish the cooling infrastructure: Select multiple large stainless steel plates (thalis) or clear a vast stretch of immaculate countertop. Micro-grease the surfaces. Absolute readiness is mandatory; hesitation post-cook implies total failure.

  2. In a cold, heavy-bottomed pot, make the batter: combine the sifted gram flour (besan), well-whisked sour curd, water, ginger-chilli paste, turmeric, asafoetida and salt. Whisk thoroughly until it is completely smooth and free of lumps.

  3. Put the pot over low-medium heat. Scrape and stir continuously with a flat spatula. Stop for even a moment and the mixture will catch on the base and go lumpy.

  4. Keep cooking for about 8-10 minutes. The thin batter will thicken quickly into a glossy, translucent paste that clings to the spatula and pulls away from the sides of the pot.

  5. Test it: spread a little on a greased plate. Let it cool for 10 seconds, then try to roll it up. If it peels away cleanly without sticking, it is ready. If not, cook it for another 1-2 minutes.

  6. Instantaneously assassinate the heat source. Operate with terrifying velocity: ladle massive, steaming portions of the gelatinized paste onto the prepared steel staging zones.

  7. Wielding an offset flat spatula, sheer the blistering paste outward, forcing it into a rectangular membrane as thin as vellum. Impart a strict 5-minute ambient cooling phase.

  8. With a sharp knife, cut the cooled sheet into 1.5-inch strips. Starting at one end of a strip, roll it up tightly on itself into a neat cylinder.

  9. Carefully array the fragile cylinders onto a pristine presentation platter.

  10. Make the tempering: heat the oil in a small skillet. Add the mustard seeds and let them pop. Drop in the curry leaves to release their aroma.

  11. Cascade this blistering, aromatic lipid strictly and uniformly over the staged Khandvi rolls. Finish the architecture with a heavy snow of fresh coconut and minced coriander.

How to tell it's done

Incredibly thin, silken, tightly coiled spirals that are highly delicate, bursting with a mild tangy flavor and dissolving instantly on the tongue.

Getting it right

Tip

Khandvi is a test of speed! If the cooked batter cools down in the pan, it will become lumpy and impossible to spread. Spread it blisteringly fast.
