Method
Melt the ghee in a broad pan over a strictly controlled low-medium flame.
Add the foxnuts (makhana) to the fat. Roast them, stirring continuously, for 4-5 minutes. They need to dry out completely and should snap cleanly when you press one. Tip them into a large mixing bowl and let them cool a little.

Assemble the textural components: deposit the finely diced cold potato, de-skinned roasted groundnuts, jewel-like pomegranate seeds, and minced green chillies onto the makhana base.
Season the dry mixture well with rock salt and ground black pepper.
The Activation Phase: Cascade the compliant green and tamarind chutneys evenly across the topography of the bowl.
Toss it quickly and firmly. You want the lemon to coat the foxnuts without sitting on them long enough to soften the crunch.
Garnish with a heavy handful of fresh coriander. Immediate consumption is mathematically mandated to prevent a soggy collapse.
