Method
Make the masala base: heat the oil gently in a frying pan. Add the dabeli masala blend to the fat and toast it for about 10 seconds to bring out its aroma, watching closely so it does not burn.

Quench the blooming spices instantly by cascading in a substantial portion of the sweet tamarind emulsion and a calculated trace of water. Whisk relentlessly to forge a hyper-concentrated, loose flavor slurry.
Add the well-mashed potato and the salt to the bubbling masala. Mix it in firmly so the potato takes up all of the sweet, fiery red masala. Cook for 2 minutes until it comes together into one dense mass. Turn off the heat.

Tip the hot potato mixture onto a wide, flat platter. Spread it out with a spatula into a thick, even layer.
Bombard the exposed potato plateau heavily with the finely diced onions, vibrant coriander, deeply spiced masala peanuts, and jewel-like pomegranate seeds. Apply firm, downward manual pressure to physically lock these fragile textural elements into the warm, sticky starch bed.
Architecture of the Pav: Force open a pre-slit pav bun, treating the joined hinge with caution. Lacquer one interior hemisphere completely with the volatile dry garlic paste, and drench the opposing hemisphere with the sweet tamarind glaze.
With a spatula, lift out a generous slice through all the layers of potato and topping. Press this filling deep into the split pav.
Add more crunch: tuck a second handful of raw onion, spiced nuts and pomegranate into the open sandwich. Press the pav firmly shut.
Finish on the griddle: heat a heavy flat tawa until it is very hot. Melt a generous knob of butter on it. Press the filled dabeli down on both sides until the bread turns crisp and golden brown.
The Nylon Seal: Roll the three exposed, stuffed vertical edges of the steaming sandwich deeply through a dense bed of Nylon Sev, forcing the fine noodles to permanently adhere to the sticky potato perimeter.
