Method
In a capacious mixing vessel, unify the thoroughly cooled mashed potatoes, finely grated beetroot, grated carrots, and roughly mashed peas.
Mix in the grated ginger, minced chillies, garam masala, red chilli powder, dry mango powder (amchur) and salt, working it together well by hand.
Check how wet the mixture is. Work in breadcrumbs to soak up any remaining moisture. Knead until you have a dense, easily shaped, deep red dough. Add more breadcrumbs if it is still sticky.
Segment the dough into uniform portions. Mold each fragment into a substantial oval or stylized teardrop (heart) shape to replicate the authentic railway aesthetic.
Coating: dip a shaped cutlet quickly into the thin cornflour slurry, so a light, even layer covers every surface.
Instantly transfer the glazed cutlet into the dry breadcrumb bed. Roll and press firmly, compelling the crumbs to adhere and construct a formidable armor. Impose a 10-minute refrigeration phase to permanently lock the crust structure.
Elevate your cooking oil in a broad, heavy-walled pan to a steady medium-high thermal state for shallow frying.
Lower the breaded cutlets gently into the oil. Leave them undisturbed for 4-5 minutes until the underside is deeply crisp and golden brown.

Turn them over very carefully with a wide spatula. Fry the second side until it is just as crisp and golden. Lift onto absorbent paper.

Tip
