  1. Make the filling: in a large mixing bowl, mash the boiled potatoes finely. Mix in the boiled green peas, finely minced chillies, grated ginger, roasted cumin, red chilli powder, garam masala, amchur (dry mango powder), salt and fresh coriander. Knead by hand into a well-spiced, dry, cohesive filling.

  2. Segment the seasoned potato aggregate into uniform units. Roll each portion dynamically between your palms to forge a dense, elongated cylinder (a tight capsule).

  3. Stage a broad, shallow reservoir of ambient water. Grasp a crust-trimmed bread slice and perform a hyper-rapid plunge into the fluid—exactly 1 second. Instant retrieval is absolutely critical to avert disintegration.

  4. Hold the soaked bread flat between your palms. Press firmly and evenly to squeeze out all the water. The crumb will flatten into a soft, pliable sheet like dough.

  5. Place a shaped potato roll in the centre of the damp bread. Wrap the bread around it, pinching the edges to seal completely. Roll it between your hands to smooth away the seams into a neat, unbroken oval.

Getting it right

Tip

Squeezing all the water out of the bread is vital. If the bread is too wet, the roll will break in the oil and absorb massive amounts of grease.
