Method
Add the rolled oats to a dry mixer jar and pulse them to a fine powder.
In a large mixing bowl, combine the powdered oats, besan (gram flour), turmeric, cumin seeds, and salt.
Add the curd and a splash of water. Whisk well to ensure there are no lumps. The batter will thicken rapidly as the oats absorb water.
Add the finely chopped onions, tomatoes, capsicum, green chillies, grated ginger, and fresh coriander.
Add the remaining water gradually until you reach a smooth, pouring consistency similar to dosa or pancake batter. Let it rest for 5 minutes.

Heat a flat non-stick tawa (griddle) on medium heat. Lightly grease it with a drizzle of oil.
Pour a ladle full of the batter into the center of the tawa. Gently spread it outward into a circular shape. Do not make it paper-thin, or it will break.
Drizzle a little oil around the edges. Cover with a lid and cook on low-medium heat for 2-3 minutes.

Once the top looks dry and the bottom is golden brown, carefully flip the chilla using a wide spatula.
Cook the other side uncovered for 1-2 minutes until slightly crisp and golden spots appear.

Serve hot immediately.
How to tell it's done
A soft, slightly dense pancake, crisped at the very edges and studded with vegetables that still hold their colour.

Tip
Oats lack gluten, so adding a little Besan (gram flour) is essential to bind the batter. Cooking it covered for the first few minutes ensures the thick pancake cooks entirely through.

A light breakfast that suits a diet. Serve with unsweetened yogurt or a tangy green chutney.
