Method
In a capacious mixing vessel, amalgamate the flawlessly hydrated sabudana, completely mashed potato base, and the structural crunch of coarsely crushed peanuts.
Mix in the finely chopped green chillies, freshly grated ginger, cumin seeds, rock salt, a squeeze of lemon juice and the chopped fresh coriander.
Knead it firmly by hand until everything binds into a dense, workable dough, much like the base for a vada.
Rub a little oil on your hands. Divide the mixture and press it into tight, dense balls, sized to fit the hollows of your appe or paniyaram pan.
Elevate the custom Appe pan over a steady low-medium flame. Deposit a highly controlled droplet of peanut oil (or liquid ghee) directly into the nadir of each mold.
Slot the crafted sabudana spheres into the pre-heated cavities. Lock the apparatus with its lid, forcing a steam-cook micro-climate for exactly 3-4 minutes.

Take off the lid. Using a wooden skewer or a thin spoon, flip each appe over quickly.
Dispense a secondary micro-drop of fat if the spheres demand it. Sizzle them entirely uncovered for an ensuing 3-4 minutes, terminating only when the complete exterior geography is armored in a golden, shattering crust.

This is a brilliant hack for enjoying the exact taste of Sabudana Vadas but with 90% less oil. Ensure the balls are packed tightly so they don't break apart while flipping.
