Method
Heat the oil or ghee in a heavy-bottomed pan. Add the finely diced onion, green chilli and freshly grated ginger. Sauté until the onion turns translucent.
Add the finely diced mixed vegetables (carrots, peas, capsicum) to the pan. Fry them for 2-3 minutes so they soften slightly but keep their colour.

Introduce the finely chopped tomatoes alongside the turmeric, red chilli powder, and salt. Apply relentless heat and stirring action until the tomato matter utterly disintegrates into a homogenized, rich paste.
Add the dry rolled oats and the garam masala to the spiced base. Toast them in the dry pan for 60 seconds, so the oats take up the flavoured oil and turn nuttier.

Pour in the measured water. Stir well from the bottom up to bring everything together, then bring the liquid to a rolling boil.
Turn the heat right down. Cover the pan tightly and let it steam for 3-5 minutes. The oats will absorb the water and swell into a thick, creamy porridge.

Turn off the heat. Fold a generous amount of freshly chopped coriander through the porridge.
Mandate immediate consumption while the dish radiates extreme comfort heat.
How to tell it's done
Should have a thick, porridge-like consistency that is creamy, savory, and punctuated by the slight crunch of cooked vegetables.
Getting it right
Tip
For a creamier texture, replace a portion of the water with milk. Toasting the oats before adding water prevents them from becoming a sticky, gluey paste.

A quick breakfast. Serve warm with a squeeze of lemon, or a side of yogurt.
