You'll need: Stovetop, Oven.
Method
Preheat your oven to 200°C (400°F). If you don't have an oven, you can use a heavy tawa (pan) with a lid.
In a mixing bowl, combine the grated processed cheese and mozzarella cheese.
Add the finely diced capsicum, onions, green chillies, garlic (if using), red chilli flakes, black pepper, and fresh coriander to the cheese. Toss lightly to mix.
Take the bread slices and spread a thin layer of softened butter evenly on one side of each slice. This protects the bread from getting soggy.
Take a generous handful of the cheese-veggie mixture and pile it thickly on the un-buttered side of the bread slices. Press it down slightly so it sticks.
Oven Method: Place the loaded slices on a baking tray. Bake for 8-10 minutes until the cheese is bubbling, completely melted, and starts developing golden brown spots.

Tawa Method: Heat a tawa on low flame. Place the loaded slices on the tawa (buttered side down). Cover with a tight lid and cook on extremely low heat for 5-7 minutes until the cheese melts completely and the base is crispy.

Remove the toasts carefully. Slice them diagonally into triangles.
Serve smoking hot.
How to tell it's done
A rock-hard, buttery toasted bread base carrying a heavy, gooey, molten layer of gooey cheese, punctuated by the sharp crunch and heat of raw peppers and onions.

Tip
A mix of Processed Cheese (for that sharp, salty Indian cafe flavor) and Mozzarella (for the luxurious cheese pull) is the absolute secret to cafe-style toasts.
