Method

  1. Drain the soaked urad dal well, tipping away all the water. Put it into a wet grinder or a powerful blender. Grind the lentils to a very smooth, thick, fluffy paste, adding the ice-cold water only a spoonful at a time, and only when the blades stop moving.

  2. Tip the ground batter into a very large mixing bowl. Whip it by hand, always in the same direction, without stopping for a good 3-5 minutes. This beats air into the batter and makes it grow in volume.

  3. Test it: pinch off a tiny pearl of batter and drop it into a bowl of plain water. If it floats straight away and stays up, the batter has enough air in it and is ready.

  4. Fold the finely chopped chillies, grated ginger, cracked peppercorns, curry leaves, fresh coriander, asafoetida (hing) and salt through the batter.

  5. Command your deep-frying lipid to a steady, medium-high thermal state within a heavy-walled kadhai.

  6. Wet your palms thoroughly with water. Take a dense, lemon-sized ball of the aerated batter. With the thumb of your other hand, make a hole straight through the middle so it takes the classic doughnut shape.

  7. With a fluid, confident motion, slide the shaped vada off your hand and directly into the blistering thermal bath. Throttle the batch size based strictly on the pan's surface area to prevent a disastrous temperature drop.

  8. Maintain a vigilant fry over medium heat. Perform occasional, careful rotations until the vadas manifest a structurally rigid, deeply resonant golden-brown crust across both hemispheres.

  9. Extract decisively using a spider skimmer, shedding all excess fat onto absorbent culinary toweling. Demand immediate service.

How to tell it's done

A masterpiece of texture: a deeply golden, highly crispy exterior that shatters when bitten, revealing a snowy white, airy, spongy interior flavored with bursts of black pepper.

Getting it right

Tip

Add the salt just before frying, so the batter doesn't turn watery. Beating the batter well by hand is the real secret to vadas as light as cloud.

The quintessential South Indian breakfast. Serve submerged in piping hot Sambar, alongside fresh Coconut Chutney.
