Allow about 90 minutes of inactive rising and cooling; the dough needs time to puff before baking and settle before slicing.

Method

  1. Mix warm milk with yeast and a little measured sugar. Rest until foamy.

  2. Combine flour, salt, beaten egg, part of the melted butter, and the yeast mixture to make a soft dough.

  3. Knead until smooth, cover, and let rise until noticeably puffy.

  4. Mix ground walnuts with the remaining sugar, cinnamon, vanilla, and enough melted butter to make a spreadable filling.

  5. Roll the dough into a thin rectangle and spread the walnut filling evenly over it.

  6. Roll tightly into a log and place seam-side down in a greased loaf pan or ring pan.

  7. Let it rise again until slightly puffed, then bake at 180°C until golden and cooked through.

  8. Cool before slicing and dust with powdered sugar if using.
