Ingredients
Quantities are for 2 servings.
You'll need: Stovetop.
Allow 10 minutes of inactive chilling before frying; a cold, double-coated cheese slice is less likely to leak into the oil.
Method
Pat the cheese slices dry so the coating sticks evenly.
Coat each cheese slice first in the measured flour, then in the beaten egg, and finally in the measured breadcrumbs.
Repeat the egg and breadcrumb coating once more for a stronger crust that helps keep the cheese inside.
Chill the coated cheese for 10 minutes while the oil heats.
10 min
Heat the measured oil in a pan over medium heat. Fry the cheese until the coating is golden and crisp on both sides.
Drain briefly on a rack or paper towel and serve immediately before the cheese firms again.
Serve hot with the measured tartar sauce.
How to tell it's done
The crust should be crisp and golden, while the cheese inside should be hot, soft, and stretchy.
Getting it right
Tip
Double-coating and chilling the cheese reduces leaking, which is the main risk when frying smažený sýr.
What to serve it with
Serve with tartar sauce, boiled potatoes, fries, or a simple salad.
Common mistakes
- The cheese leaks out before the crumb turns golden.
- Use firm melting cheese, double-coat it, and chill it before frying. Keep the oil at medium heat so the crust sets before the centre melts too far.
Substitutions
- Edam cheese can be replaced with gouda or another firm melting cheese, but very soft cheese may leak during frying.
- Packaged tartar sauce may contain egg, mustard, or other formulation-dependent allergens, so check labels if needed.
- Use fine dry breadcrumbs for a more even crust than fresh soft crumbs.
Storing and reheating
Czech fried cheese is best served immediately. Refrigerate leftovers for up to 2 days and reheat uncovered in a hot oven or air fryer; freezing is not recommended because the coating turns soft.
