Method

  1. Rinse the soaked grey peas and place them in a pot with fresh water and the bay leaf.

  2. Simmer until the peas are tender but still hold their shape, then drain and discard the bay leaf.

  3. Cook the measured bacon in a pan until the fat renders and the bacon begins to crisp.

  4. Add the onion to the bacon fat and cook until soft and lightly golden.

  5. Add the cooked grey peas to the pan and toss gently with the bacon and onion.

  6. Season with black pepper and adjust the salt only after tasting.
