Method

  1. Season the lamb with part of the measured salt, black pepper, oregano, and garlic.

  2. Heat part of the measured butter in a heavy pan and brown the lamb on all sides.

  3. Add the measured stock, cover, and simmer until the lamb begins to turn tender.

  4. Stir in the rinsed rice and transfer the lamb mixture to a baking dish.

  5. Whisk the yogurt with the beaten eggs and the remaining salt until smooth.

  6. Pour the yogurt mixture over the lamb and dot the top with the remaining butter.

  7. Bake at 180°C until the sauce is set, the top is lightly golden, and the lamb is tender.

  8. Rest for a few minutes before serving so the yogurt sauce settles.
