No inactive time is required, though bigos often improves after cooling and reheating; cook it when you can give the pot an occasional stir.
Method
Cook the measured bacon in a heavy pot until the fat renders and the bacon begins to crisp.
Add the pork shoulder and brown it well. Add a little measured oil only if the pot looks dry.
Add the onion and cook until soft, then stir in the kielbasa, paprika, and caraway seeds.
Stir in the tomato puree, sauerkraut, fresh cabbage, mushrooms, bay leaf, black pepper, and stock.
Cover and simmer gently, stirring occasionally, until the pork is tender and the cabbage has melted into the stew.
Taste before adding salt because sauerkraut, bacon, and kielbasa can already be salty.
Remove the bay leaf and serve hot, or cool and reheat later for an even deeper flavour.

- Pork sausage can replace kielbasa, but the smoky Polish profile will be less specific.
- Button mushrooms can replace porcini mushrooms, though porcini gives a deeper woodland flavour.
