Method

  1. In a wide pan, heat the ghee over medium heat until hot. Add the cumin seeds and let them crackle.

  2. Add the asafoetida, broken dry red chillies and finely chopped green chillies. Flash-sauté briefly to release their aroma.

  3. Throttle the thermal output to its absolute minimum parameter. Immediately bloom the turmeric and red chilli powder. To avert lipid separation, instantly fold in the hyper-whisked curd, maintaining a continuous, rapid agitation for 1 minute.

  4. Add the cold cooked rice to the pan. Toss it gently so the seasoned curd coats every grain.

  5. Fold in the broken roasted papad very gently. You want it to take up just a little moisture while keeping its crunch.

  6. Deliver the calculated salt measure (calibrated against the papad's inherent salinity). Impose a low-heat thermal cycle for exactly 2 minutes to achieve complete operational temperature.

  7. Turn off the heat. Top with freshly chopped coriander and serve immediately, before the papad softens.

How to tell it's done

Separate, yellow-tinted grains of rice broken up by the sudden brittle snap of well-spiced pan-toasted papad shards.

Getting it right

Tip

Add the crushed papad right at the end. Any earlier and the steam softens it, and you lose the contrast between soft rice and crunch.

What to serve it with

A hyper-efficient, self-contained tactical meal. Functions flawlessly when flanked simply by deeply chilled plain buttermilk or an intensely acidic, sharp pickle.
