Method
Heat ghee in a pressure cooker or a heavy-bottomed pan on medium heat. Add the fennel seeds and assorted whole spices. Sauté until they release a rich aroma.
Add the sliced onions and fry patiently until they turn deep golden brown. Caramelized onions are key to the biryani's base flavor.
Stir in the ginger garlic paste and roughly chopped mint leaves. Sauté for a minute until the raw smell completely fades.
Add the chopped tomatoes, coriander powder, red chilli powder, freshly crushed black peppercorns, and salt. Cook until the tomatoes are mushy and oil separates.
Add the thickly sliced mushrooms. Sauté them in the masala on medium-high heat for 3-4 minutes. They will release some moisture.

Drain the soaked basmati rice and gently fold it into the mushroom masala for 1 minute without breaking the grains.

Pour in the thick coconut milk and water. Stir gently. Check the salt (the liquid should be slightly salty).
Bring to a boil. Close the pressure cooker lid and cook for 1 whistle on high heat, then lower the flame and simmer for 3 minutes before turning it off. (If using a pot, cover and simmer for 12 minutes).

Let the pressure release naturally. Open, fluff gently, and serve hot.
