Method

  1. Heat the ghee in a wide, heavy-bottomed pot over medium heat.

  2. Add the whole spices: green cardamom, cloves, and cinnamon. Sauté for 10 seconds until they release their sweet, warm fragrance.

  3. Add the thinly sliced onions and slit green chillies. Sauté until the onions turn translucent. Do not let them brown, to preserve the pristine white color of the dish.

  4. Stir in the ginger garlic paste and fresh mint leaves. Cook for 1 minute until the raw smell of the garlic disappears.

  5. Drain all the water from the soaked basmati rice and gently add the rice to the pot. Toss lightly for 1 minute to coat the grains with ghee.

  6. Pour in the measured coconut milk and water. Add the salt and stir the mixture gently.

  7. Bring the liquid to a rolling boil over medium-high heat. Once bubbling, lower the heat to the absolute minimum setting.

  8. Cover the pot tightly with a lid and simmer undisturbed for 12-15 minutes, until the rice has fully absorbed the milky liquid.

  9. Turn off the heat and let the rice rest for 10 minutes. Fluff carefully before serving.

Getting it right

Tip

Using half coconut milk and half water is the golden ratio. Using purely thick coconut milk might make the rice overly heavy and slightly sticky.
