Method

  1. Heat oil in a large wok over medium flame. Add the finely minced garlic immediately.

  2. Fry the garlic patiently, stirring continuously, until it turns a deep, dark golden brown (almost burnt, but not black). This crucial step flavors the oil heavily.

  3. Using a slotted spoon, quickly remove about half of the browned crispy garlic bits and keep them aside for garnish.

  4. Turn the heat up high. Add the spring onion whites, diced carrot and french beans to the garlicky oil and stir-fry for a minute.

  5. Add the chilled cooked rice into the wok, breaking any lumps.

  6. Drizzle the soy sauce and vinegar evenly. Sprinkle black pepper powder and salt over the rice.

  7. Toss and mix continuously on the highest flame for 2 minutes, ensuring the rice absorbs the smoky garlic flavors perfectly.

  8. Turn off the heat. Sprinkle the reserved crispy burnt garlic bits and spring onion greens on top. Serve immediately.

Getting it right

Tip

Do not rush the initial browning of the garlic. The line between beautifully 'burnt' (deep brown and nutty) and ruined (black and bitter) is very thin. Watch it closely.
