Method

  1. Make the marinade: mix the whisked yogurt, half the crisp fried onions, chopped mint, fresh coriander, ginger-garlic paste, biryani masala, red chilli powder, some of the ghee and the salt. Coat the chicken thoroughly and set it aside.

  2. In a large pot, bring plenty of well-salted water with the whole spices to a rolling boil. Add the soaked basmati and parboil it until it is about 70% done, still chalky in the centre. Drain it immediately.

  3. Take a heavy-bottomed pot. Spread the raw marinated chicken evenly across the base, so the heat reaches it evenly.

  4. Spread the hot, drained rice evenly over the raw chicken in a single, unbroken layer.

  5. Artfully dress the top layer by drizzling the deeply hued saffron milk, the residual premium ghee, the reserved fried onions, and a final scattering of fresh mint.

  6. Seal the pot tightly with heavy foil or a rim of dough. Cook over medium-high heat for 10 minutes to get the steam going. Then turn the heat right down and cook on dum for 20 minutes.

  7. Turn off the heat and let it stand for 10 minutes. To serve, use a wide spatula to lift the chicken up from the bottom and fold it carefully through the long grains of rice.
