Method

  1. Make sure you are using cold, leftover, or completely cooled freshly cooked rice for the best texture.

  2. Heat oil in a wide pan or kadai over medium heat. Add the mustard seeds and allow them to crackle.

  3. Add the split bengal gram (chana dal) and split black gram (urad dal). Fry on low heat until the lentils turn a crisp, golden brown.

  4. Toss in the curry leaves and sliced onions. Sauté until the onions turn translucent.

  5. Add the sliced green capsicum. Stir-fry on medium-high heat for 3-4 minutes. You want the capsicum to cook but retain a slight crunch.

  6. Add the finely chopped tomato along with turmeric powder, red chilli powder, garam masala, and salt. Cook for 2 minutes until the tomato softens and blends into a coarse paste.

  7. Turn the heat down to low. Add the cold cooked rice to the pan.

  8. Gently toss and mix the rice with the capsicum masala until every grain is evenly coated and heated through (about 2-3 minutes).

  9. Remove from heat and serve hot.
