Method

  1. Heat the ghee in a heavy pot. Add the cumin seeds and let them crackle to flavour the fat.

  2. Add the slit green chilli and the finely diced green capsicum. Sauté over high heat for 2 minutes; the capsicum should soften a little but keep its crunch.

  3. Add the boiled sweet corn. Toss it through with the capsicum and cook for another minute.

  4. Ruthlessly evacuate all residual hydration from the soaked Basmati rice. Commit the grains directly into the active pot. Employ an ultra-delicate folding technique to micro-roast the starch within the seasoned ghee for 1-2 minutes, sealing the exterior structure.

  5. Add the salt and freshly ground black pepper. Pour in the measured water.

  6. Bring it to a rolling boil. Turn the heat right down, cover the pot tightly, and simmer for 12-15 minutes without lifting the lid, until all the liquid is absorbed.

  7. Sever the thermal supply entirely. Mandate a strict 5-minute undisturbed stabilization hold to lock the gelatinized starches in place.

  8. Uncover, fluff it very gently with a fork, scatter over plenty of fresh coriander and serve immediately.
