Ingredients
Quantities are for 2 servings.
You'll need: Pressure Cooker.
Includes soaking time.
Method
Heat ghee in a pressure cooker on medium flame. Once hot, add the cumin seeds and let them crackle.
Add the crushed garlic and sauté for a few seconds until golden and fragrant.
Add the finely chopped onions and sauté until they turn translucent and soft.
Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes are slightly mushy.
Drain the soaked rice and masoor dal, and add them to the cooker. Roast gently with the masala for 1 minute.

Pour in the water. For a thicker khichdi, use less water; for a porridge-like consistency, add a bit more. Stir well.
Close the pressure cooker lid and cook on medium heat for 3-4 whistles.
Let the pressure release naturally. Open the lid, stir vigorously to mash the dal slightly into the rice, and serve piping hot.
How to tell it's done
Ultra-soft, creamy, and soothingly wet rice and lentil porridge.

Getting it right
Tip
Masoor dal cooks extremely quickly and breaks down completely, giving this khichdi a beautifully creamy, almost risotto-like texture without any cream.
What to serve it with
Top with an extra dollop of ghee and serve with a side of pickle (achar), curd, and roasted papad for a soul-satisfying meal.
