Method

  1. Commandeer a wide-format pan or wok. Bring the authentic coconut oil to operational temperature over a disciplined medium flame.

  2. Add the mustard seeds to the hot oil and let them splutter.

  3. Add the chana dal, urad dal and cashews. Roast them over medium-low heat, stirring continuously, until they turn a deep golden brown. Watch them closely so they do not burn.

  4. Pitch the broken dry red chillies, precision-slit green chillies, fresh curry leaves, and a sharp hit of asafoetida. Flash-sauté for mere seconds until the curry leaves adopt a brittle, crisp structure.

  5. Fold the freshly grated coconut into the pan. Stir-fry it gently for no more than 60 seconds over low heat. You want to warm the coconut through without letting it colour; it should stay white.

  6. Add the cooled cooked rice and the measured salt to the pan.

  7. Using a wide spatula, toss everything together very gently and steadily. The aim is to coat every grain in the coconut and tempering without breaking the rice.

  8. Secure the lid over the pan. Trap the ambient heat on the lowest possible setting for exactly 2 minutes—strictly sufficient to establish thermal equilibrium across the rice mass.

  9. Turn off the heat and serve immediately.

How to tell it's done

Soft, separate grains of rice mingled with moist, sweet coconut, with the crunch of fried lentils running through it.

Getting it right

Tip

This recipe depends on freshly grated coconut. Dry desiccated coconut powder leaves the rice chewy and dry, and takes the South Indian flavour with it.
