Street Style Chicken Fried Rice

Method
Heat a wok or large pan over high heat. Add a little oil, pour in the beaten eggs, and quickly scramble them. Remove the scrambled eggs to a plate and set aside.
Add a little more oil to the same wok. Add the small chicken pieces with a pinch of salt and pepper and stir-fry hard on high heat for 3-4 minutes until cooked through and lightly browned. Set aside with the eggs.

Add the remaining oil to the hot wok. Throw in the finely chopped garlic and spring onion whites, sautéing for 10 seconds.

Add the chopped carrots and french beans. Toss and stir-fry for 1 minute on high flame.

Add the chilled cooked rice into the wok. Break up any lumps. Add the cooked chicken and scrambled eggs back into the wok.
Drizzle the soy sauce and vinegar. Sprinkle the remaining black pepper powder and salt.
Toss vigorously continuously for 2-3 minutes on the highest heat so that all ingredients are well mixed and infused with wok hei (smoky flavor).

Garnish with fresh spring onion greens, toss once more, and serve smoking hot.

Cutting the chicken into very small pieces (pea-sized) is crucial for street-style authenticity; it ensures the chicken cooks in minutes and distributes evenly throughout the rice.
