You'll need: Stovetop, Pressure Cooker.

Includes soaking time.

Method

  1. Heat ghee in a heavy-bottomed pan or pressure cooker over medium heat. Once warm, add the cumin seeds and allow them to crackle.

  2. Add the bay leaf, black cardamom, cinnamon, and cloves. Sauté for a few seconds until the spices release their aroma.

  3. Drain the soaked basmati rice completely and add it to the pan along with the green peas.

  4. Gently sauté the rice and peas for a couple of minutes to lightly toast the grains in the ghee. Be careful not to break the rice grains.

  5. Pour in the measured water and add salt. Stir gently. Bring the water to a rolling boil.

  6. Lower the heat to a gentle simmer, cover with a tight-fitting lid, and cook undisturbed for exactly 10-12 minutes, or until the water is fully absorbed.

  7. Turn off the heat and let the pan rest covered for another 5 minutes before fluffing the rice gently with a fork.

Tip

Using a fork to fluff the rice instead of a spoon ensures the delicate Basmati grains remain intact and fluffy.
