Method

  1. Melt the measured butter in a pot over medium-low heat. Add the leeks and onion, then cook gently until soft without browning.

  2. Add the potato, warm vegetable stock, bay leaf, salt, and black pepper. Bring to a simmer.

  3. Cover and cook until the potatoes are very tender and the leeks have fully softened.

  4. Remove the bay leaf. Blend the soup until smooth, then return it to low heat.

  5. Stir in the heavy whipping cream and warm gently without boiling hard. Adjust seasoning and finish with parsley.
