Method
Heat the oven to 190°C. Line a small tart tin with the measured shortcrust pastry, press it neatly into the edges, and prick the base with a fork.
Blind-bake the pastry until it looks dry and lightly set, then remove it from the oven.
Cook the smoked bacon in a pan over medium heat until lightly browned. Drain away excess fat if needed and spread the bacon over the pastry base.
Whisk the eggs, heavy whipping cream, milk, black pepper, nutmeg powder, and salt until smooth. Pour the custard over the bacon.
Bake until the filling is set at the edges and has a slight wobble in the center. Rest before slicing and serve warm or at room temperature.
