You'll need: Stovetop.

No inactive time is required; build the broth first, then add seafood in stages so each piece stays tender.

Method

  1. Heat the measured olive oil in a heavy pot over medium heat. Add the onion and fresh fennel, then cook until softened but not browned.

  2. Add the garlic and tomato. Cook until the tomato softens and the mixture begins to look saucy.

  3. Pour in the white wine and simmer briefly. Add the warm fish stock, saffron, orange zest, bay leaf, thyme, salt, and black pepper.

  4. Simmer the broth until fragrant and slightly reduced. Add the white fish and cook gently until it is almost done.

  5. Add the prawns and mussels. Cover and cook until the prawns are opaque and the mussels open.

  6. Discard any mussels that remain closed. Remove the bay leaf, finish with parsley, and serve hot.

The broth should be aromatic and lightly thickened, with tender fish and just-opened mussels.

Substitutions

  • Use another firm white fish if White Fish is not available under that grocery name.
  • Seafood Stock may be used in place of Fish Stock if available and label-safe.
  • Prawns or mussels may be adjusted based on availability, but the seafood allergen profile must remain unverified unless checked.
  • White Wine can be replaced with more Fish Stock for an alcohol-free version, but the flavor will be less classic.

Storing and reheating

Bouillabaisse is best fresh. Refrigerate leftovers for 1 day and reheat gently without boiling; freezing is not recommended once seafood is cooked.
