Method

  1. Season the chicken with salt and black pepper. Heat the measured olive oil in a heavy pan and brown the chicken on both sides.

  2. Remove the chicken to a plate. Add the onion and cook until it softens, then add the garlic, red capsicum, and yellow capsicum.

  3. Cook until the peppers begin to soften. Add the tomato, white wine, bay leaf, thyme, paprika, and any remaining seasoning.

  4. Return the chicken to the pan. Cover and simmer gently until the chicken is fully cooked and tender.

  5. Uncover and simmer briefly if the sauce is too thin. Remove the bay leaf and finish with parsley.
