Method
Heat part of the measured olive oil in a heavy pan over medium heat. Add the onion and cook until it turns soft and lightly golden.
Add the garlic and cook briefly until fragrant. Add the brinjal and cook until the edges begin to soften.
Add the remaining measured olive oil, zucchini, and red capsicum. Stir well and cook until the vegetables begin to relax but still hold their shape.
Add the tomato, thyme, bay leaf, salt, and black pepper. Lower the heat, cover partly, and simmer until the vegetables are tender and the sauce looks glossy.
Remove the bay leaf. Rest for a few minutes before serving so the flavors settle and the vegetables stay intact.

The finished ratatouille should be saucy and tender, with visible vegetable pieces that still hold their shape.
