Method
Heat oil in a wok until visibly hot. Toss in the finely chopped garlic and slit green chillies, letting them sizzle to flavor the oil.
Add the small chicken cubes. Stir-fry constantly on high heat until the pieces are seared, slightly golden, and cooked through.
Drop in the onion petals and capsicum squares. Toss quickly for a minute. They should remain completely crunchy, just blistered by the wok heat.
Drizzle the green chilli sauce, dark soy sauce, and vinegar directly over the chicken and veggies. Add salt and freshly ground black pepper.
Stir rapidly to coat everything in the glossy, dark, and highly aromatic Tangra-style sauce mixture.
Immediately add the chilled, pre-cooked basmati rice into the wok.
Use a wide spatula to toss the rice, scooping from the bottom so the dark chilli sauce coats every grain evenly without turning mushy.
Finish with a generous handful of chopped spring onion greens, toss one last time, and remove from heat.
How to tell it's done
Firm, distinctly separate rice grains uniformly stained dark brown, studded with juicy chicken bites, pungent chilli slices, and crunchy, bright green capsicum.

The hallmark of Kolkata's Tangra Chinese is the distinct, sharp bite of green chilli sauce paired with the smokiness of a very hot wok (wok hei). Do not skimp on the garlic and green chillies.
